Who Are We?: Founded in 2023, Oaxaca is a space dedicated to the research, production and marketing of native corn products. We specialize in the nixtamal technique, which has existed for approximately 5000 years, and we have studied it all this time to understand it and achieve products of the highest quality.
We were born from the need to generate reliable and easy-to-digest information about corn throughout its production cycle, which includes decent and fair work with its producers, up to the transmission of all the information obtained for chefs, students or anyone interested in the process of obtaining a quality and healthy tortilla.
How do we work?: Oaxaca focuses its work solely on the use of native corn, which we buy directly from producers without intermediaries, which allows us to know the origin and treatment of the product. Our products are 100% nixtamalized with quicklime, without preservatives, colorings or "improvers".
